Our coffee grid is designed to help you quickly find the perfect coffee for your taste
and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
From Ethiopia’s Guji region, this coffee brings together mixed varieties grown by smallholder farmers across the area. Its anaerobic natural processing delivers a cup where the flavours are clear and distinct, with structure that carries from the first sip through to the finish.
Tropical fruit and confectionery-like sweetness lead the way, with milk chocolate providing a deeper base. The flavours are pronounced and easy to pick out, giving the coffee plenty of intensity without losing its shape. It’s a great example of an Ethiopian coffee where the fruit, sweetness and structure all have their place - expressive, but not difficult to get to know.
