Our coffee grid is designed to help you quickly find the perfect coffee for your taste
and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Aromas del Valle was founded in 2015 by Merly and Ivan Cruz Rivera to give smallholder producers in northern Peru more support and transparency as they bring their coffees to market. Today, the cooperative works with more than 500 producers across Jaén, San Ignacio and Cutervo. This lot comes from José Palomino, known locally as the “Guardian of Coffee from San Felipe.” José farms with his family in the dry climate and fertile soils of San Felipe, where he’s constantly experimenting and refining how he processes his coffee.
The cup is juicy and silky, with real depth to the mouthfeel. Sweet, sugar-browning flavours give it a rich foundation, while complex fruit notes and measured acidity bring clarity without overwhelming the cup. It’s a great example of how sweetness, texture and acidity can work together in a washed coffee. Give this one some time and it'll open up as it ages.
