Our coffee grid is designed to help you quickly find the perfect coffee for your taste
and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
Produced by the Alvarez family in El Salvador’s Upper Nejapa region, this Red Bourbon grows at altitudes between 1,300 and 1,500 metres. Its natural processing brings plenty of sweetness, with layers of milk chocolate, caramel and butterscotch balanced by a bright hit of citric acidity up front.
In the cup, expect a clean, chocolatey base, with a juicy acidity that lifts the sweetness without taking over. The flavours are easy to pick out, and the mouthfeel brings everything together. It’s an approachable single origin, particularly if you’re just starting to explore beyond our blends.
