Flavour Savour: Lychee Lamington

Flavour Savour: Lychee Lamington

26th Mar 2026

Our Flavour Savour series is about actually tasting the notes on the pack. This time, we've teamed up with Tokyo Lamington. Starting with a coffee (always), a chat, and a few “what if we tried ...?” moments, the idea moved quickly from two complimentary worlds throwing ideas at the wall to a big idea - and flavour - that works. Lychee Lamington was no longer just a flavour note - it was coffee and it was also a cake. And they are both real-good.

Coffee that tastes like Lychee Lamington - with tasting notes of Fresh Lychee, Coconut Flakes, Vanilla, Chocolate, and Fudge. As they say in Tokyo, get on it.

The Magic Behind the Lamington

Lychee Lamington is all about aroma that meets flavour halfway. 2 infused coffees, a Colombian duo that bring all those layers of lychee and fresh coconut feels off set by a beautiful Brazilian coffee driving the chocolates to round of those lamington vibes!

Infused coffee, “Is that flavoured syrup?” Nope, but that’s a fair guess. So how are our roasters able to nail these crazy flavours? Meet coffee producer, Rodrigo Sanchez.

Rodrigo is a fourth-generation coffee producer based in Huila, Colombia. His family has been in the specialty coffee scene for 21 years, with 420 hectares of land in coffee production. Thanks to his innovative experimental processing methods, particularly with the infusion of different fruits and flavours in his coffees (during processing), his farms produce unique profiles recognised globally.
